HISTORY
Seventy-nine place names were listed there covering an area of some 700 hectares. The winegrowers of Chablis organizes these into 17 "umbrella" vineyards. The vines are planted along the valley of the Serein river in the communes of Chablis, Fontenay, Maligny, Chichée, La Chapelle-Vaupelteigne, Courgis, Fleys and Beines.
VINES
The vines of Fourchaume are planted on the right bank of the Serein, in the commune of Fontenay-près-Chablis, with a South exposure. It is the most floral of the Premier Cru.
TERROIR
Gentle slopes of Kimmeridgian marls.
VINIFICATION
Alcoholic fermentation in stainless-steel tanks under controlled temperatures to preserve a maximum of fruit. Malolactic fermentation and ageing on lees for 6 to 8 months with pumping-over every fortnigh to lend richness.
TASTING
Premier Cru famous with its aromas of honey and white blossoms. The attack is very rich, with a nice minerality and a pleasant freshness of citrus and a taste of nuts. Full and onctuous on the palate.
ACCOMPANYING
Serve as an aperitif, salmon, shrimp, poultry, roasted capon or guinea fowl.
To drink 2 or 3 years after bottling, and to keep about 8 to 10 years.
Serving temperature : 14°C.
