HISTORY
Seventy-nine place names were listed there covering an area of some 700 hectares. The winegrowers of Chablis organized these into 17 "umbrella" vineyards. The vines are planted along the valley of the Serein river in the communes of Chablis, Fontenay, Maligny, Milly, Poinchy, Fyé, Chichée, La Chapelle-Vaupelteigne, Courgis, Fleys et Beines.
VINES
Vau de Vey is on the town of Beine, with a nice south-east exposure and a 45° slope.
TERROIR
Gentle slopes of Kimméridgian marls.
VINIFICATION
30% of the grapes are vinified and aged in barrels of 450L, 70% in stainless-steel tanks. The ageing is on thin lees during 9 months, and then, we gather all the wine in tanks before the bottling.
TASTING
Nice floral and candied white fruits notes together with vanilla notes on the second palate. Still mineral and freshness aromas, typical of the 1er Cru. The structure and delicaty together with fruit give a good complexity to the wine.
ACCOMPANYING
Serve with meats, seafood with sauce, grilled white meats, salmon in white butter sauce.
To drink 2 to 3 years after bottling and to keep about 8 to 10 years.
Serving temperature : 12°C.
