Each vintage moves away from the routine! Too much or not enough sun, rain or drought, heat or frost, every year Remi Courty must adapt and innovate in his way of vinifying to enhance the personality of the vintage and sublimate the wines of the estate, from the Petit Chablis to the Grand Crus.

The vinification and aging of our wines are mainly carried out in stainless steel vats, the objective being to preserve the typicality and purity of the Kimmeridgian. The wines are structured, with great minerality.

Our Collection range
Cuvée Chablis Collection
For 18 to 24 months, this wine is aged in new oak barrels and demi-muids. All the bottles are numbered for a production of 1,000 75cl bottles, in magnums and jeroboams.
They are dressed by hand for a unique rendering, its color changes every year to display its original character. In this sixth edition, the deep blue Chablis Collection 2019 will be appreciated now and will keep for an average of 8 years.
To fully discover its aromas of great complexity while retaining the minerality, it is to be enjoyed as an aperitif with snails, with langoustines or with mature cheeses.
Cuvée Premier Cru
Vau de Vey Collection
The aging is also carried out in new oak barrels on fine lees, for 18 months. Unfiltered, a deposit may appear but does not affect the quality of the wine.
For two consecutive years, we have been offering this Gold-coloured luxurious and prestigious cuvée. The 600 bottles are all numbered. With aromas of great richness worthy of the great wines of Burgundy, it will blossom in 3 to 4 years with lobsters, veal sweetbreads and will be enjoyed at its peak in 8 to 10 years with foie gras.
