We produce our wines under two styles of vinification. The first is done mainly in stainless steel vats for most of our wines, always under controlled temperature to preserve a maximum of fruit, and aging on lees for more complexity.
In order to bring authenticity and organoleptic richness, we also vinify in new oak barrels (228L) the wood coming mainly from the Vosges for more finesse, or in half muids (450L) for the Collection cuvées and the Premier Cru Vau de Vey.
