Élégance
Golden yellow color, nose with aromas of fruits and candied citrus fruits, slight minerality. Notes of lime blossom and acacia honey. Good balance in the mouth and finely calcareous and iodized.
At its best after one or two years in the bottle, it can be kept for an average of 5 to 8 years.

It will be served as an aperitif, with seafood, scallops, langoustines, fish terrine, snails. Serving temperature: 10-11°C

TERROIR
Loamy clay-limestone soil called "Kimmeridgian" with the presence of fossilized oysters in the shape of a comma - Exogyra virgula
VINIFICATION
Mechanical harvesting. Alcoholic fermentation in stainless steel tanks for 1 to 2 weeks. Malolactic fermentation in December, then aging on lees. Process of reassembling the fine lees in vats for bottling in the spring.
